Oaxacan Green Corn

Latin Name: Zea mays cv. Oaxacan Green

Very old variety of green sweetcorn grown by the Zapotec Indians of Mexico in the province of Oaxaca. The cobs can be eaten young as sweetcorn. They are very big. Traditionally, they are used fully ripe as flour corn to make green flour for tamales.
