Each bottle comes in a birch wood case, is sign by John (Ca Johns) Hard, is labeled with a serialized label (this is bottle 1032 of 1500), includes an autographed and serialized certificate. The Legend sauce was only produced for 5 years, 2002-2006. 


The Legend is Handcrafted in small batches from the Red Savina Habanero. The "World's Hottest Spice" according to the Guinness Book of World Records (at the time bottled). "A mere 3/100 of an ounce can produce detectable "Heat" in 1,272 pounds of bland sauce." Red Savinas® have been rated at 577,000 Scoville Heat Units, according to Dr. Paul Bosland, Director of the Chile pepper Institute. Typical habaneros register at 250,000-300,000 SHU. The Red Savina held the record from 1994 until 2006. The Red Savina pepper is a cultivar of the habanero chile (Capsicum chinense Jacquin), which has been selectively bred to produce hotter, heavier, and larger peppers. It is also commonly known as the Dominican Devil's Tongue Pepper or the Ball of Fire Pepper in Guyana. Samples of Red Savina have been measured as high as 577,000 Scoville units, however many chilli enthusiasts growing the Red Savina have been unable to reach this level of heat, even with certified Red Savina seed. The Chile Pepper Institute at New Mexico State University in Las Cruces, New Mexico, conducted an extensive field trial to test the Red Savina. In this scientific growth trial the Red Savina was unable to reach 250,000 scoville units. In February 2007 the Red Savina chili was displaced in Guinness World Records as the hottest chili in the world by the Naga Jolokia pepper


Only the finest of a season's fresh chiles are selected to produce The Legend. They are chosen for their size, quality and color. Once gathered, the finest chiles, they are ground and mixed with only a slight amount of premium white vinegar to insure they are preserved at the peak of their glory. It is then hand bottled and packaged in the unique wooden box made from Canadian Birch and designed especially for The Legend. Since The Legend is produced only from fresh chiles, the number of bottles available per season was limited. The Vintage is listed on the label of the bottle to mark its year of production. Each season will produce a puree of varying distinction. For example, 2002 brought a severe drought, which stressed the plants. This resulted in superior heat to the previous year, but less sweetness. only registered growers of the Red Savina are used, this insures that the chiles are true to the GNS strain developed by Frank Garcia, and revered by chile connoisseurs worldwide. 


This bottle is new never opened, and has been stored in an air conditioned environment. Sold as Collectors item. I recently cracked a bottle, and it was fantastic.
