Oca - Mexican Red

Latin name: Oxalis tuberosa

A tuber-forming wood sorrel. The leaves look very typical; if the heat is too great, they fold.

They can be used like sorrel.

The plants form elongated red tubers about 2-4cm in size in autumn.

The longer you can keep growing in the fall, the bigger they will get.

Either eat raw or cook until tender, they have a surprisingly good, slightly sour taste.
