El piñón de Araucaria o Pehuén, es el fruto o semilla de la Araucaria Araucana de origen solo en la Patagonia Chilena, la cual es única ya que se recolecta directo de la naturaleza y no de plantaciones. 

 

The pine nut of Araucaria or Pehuén, is the fruit or seed of the Araucaria Araucana of origin only in Chilean Patagonia, which is unique since it is collected directly from nature and not from plantations.

 

Preparación:

Primero, como son recogidos del suelo o de los árboles, deben ser lavados. En seguida ponerlos en una olla a cocer, sin pelarlos, no quitar la carcaza, con abundante agua hirviendo (previamente), cocer durante más o menos 100-120 minutos. Durante la cocción deben asegurar que los piñones estén siempre tapados de agua. pueden agregar sal o azúcar a gusto o algún condimento de preferencia. Hervirlos hasta que estén blandos (probar), su consistencia es al dente. En olla a presión necesitan solamente unos 30-40 minutos de cocción.

Estarán listos una vez que se vea que la cascara comienza a soltarse de la semilla.

First, as they are collected from the ground or from the trees, they must be washed. Then put them in a pot to cook, without peeling them, do not remove the shell, with plenty of boiling water (previously), cook for more or less 100-120 minutes. During cooking they must ensure that the pinions are always covered with water. they can add salt or sugar to taste or some preferred seasoning. Boil them until soft (try), their consistency is al dente. In a pressure cooker they only need about 30-40 minutes of cooking.

They will be ready once the shell is seen to begin to loosen from the seed.
