What is Cocoa Powder?

Natural Cocoa powder, an unsweetened chocolate product, adds deep chocolate flavour to desserts and beverages.  Cocoa powder occurs when the fat, called cocoa butter, gets removed from the cacao beans during processing.  The leftover is heat dried and the solids get ground into the product known as Cocoa Powder.

Cocoa beans — or rather seeds — are taken from the Theobroma cacao tree normally found in the equatorial regions of the Americas & Africa.  This plant produces large, pod-like fruits, each containing 20–60 beans surrounded by a sticky, sweet-tart white pulp.

Cocoa alkalization is a value-added process in cocoa processing to produce alkalized cocoa mass or powder. It involves the treatment of cocoa nibs with a food-grade alkali solution to raise the pH, producing darker colours and stronger flavours.

Alkalized cocoa mass or powder is used in chocolates, cakes, confectionery and beverages to generate desirable and unique characteristics. Reasons for alkalizing cocoa include:

Reducing the acidity of natural cocoa (pH is raised from 5.2–5.6 to almost neutral values at 6.8–7.5)

Reducing sourness

Producing intense flavours and darker colours

Increase solubility and dispersibility of cocoa in water (key in chocolate beverages).

Suggested Use:

Adult - Mix 5g (1 heaped tsp) in 200-250ml of milk or plant based milk (hot or cold milk), stir well until the mixture has dissolved.  Add sugar for sweetness.  Also add desired amount of Cocoa powder to baked treats, smoothies or unflavoured protein.
