The molokheya or "corète" is originating in West Africa, the Maghreb and the Middle East. Its scientific name is Corchorus olitorius L. and it belongs to the Tiliaceae family. Apart from "corète", molokheya has many other nicknames depending on the country: "melonkie", "molokhie", "mouloukhiya", "Tunisian mloukhia", "ademe" and "shimatsumaso".
HOW TO USE IT IN THE KITCHEN? The flavor of cornet leaves is halfway between spinach and sorrel. It is appreciated in the Tunisian cuisine in which it is called Tunisian mloukhia. It goes very well with meat often simmered, soups and in various oriental dishes.
