Each sachet of freeze-dried culture contains a blend of 4 selected bacteria to ensure consistent results:-

Lactococcus lactis subsp. lactis, Lactococcus lactis subsp. cremoris, Lactococcus lactis subsp.lactis biovar. diacetylactis and Leuconostoc mesenteroides subsp. cremoris.

The contents of the sachet are simply mixed with one litre of milk according to the accompanying instructions and will produce enough starter solution to produce over 30 batches of cheese! Works well with cows, goats, buffalo or sheep milk.

The starter solution, when added to milk 'ripens' it, making it ready for cheese formation.

The starter solution, when produced as above, may be stored frozen: if placed in ice-cube trays, this will make it easy for the correct quantity to be used for inoculation of future batches of milk.

When the starter solution is used in combination with rennet then the consistent production of cheese will be achieved, batch after batch! Inoculate and produce cheese at normal room temperatures (20 - 25C). Store unopened sachets in the freezer to extend shelf life.

*Please be aware that if you wish to use the recipe that comes with this product, you will also need rennet.
