Cooking Processes

Our insects are processed by either dehydration, freeze-drying, frying or boiling/pressure cooking.

Dehydrated insects contain between 5-10% water and shrivel in size as their moisture content is removed through a continuous flow of hot air during a period of eight hours plus.

Freeze-Dried insects contain around 2% water and retain their original colour, form, size, taste and texture. Moisture content is removed through the use of cold temperatures and since the food remains frozen during the process, the food's cell structures do not change. It's often noted that unseasoned freeze-dried insects taste far superior to unseasoned dehydrated insects. Freeze-dried insects also rehydrate quicker than dehydrated ones.

Fried insects well need we say more. Possibly just pip freeze-dried insects in the taste test but not every-bodies preference given the higher fat content!

Community Veterinary Checks Regime

All Crunchy Critters imports of products of animal origin (POAO) from outside Europe into UK are subject, by law, to the Community Veterinary Checks Regime. It is through this regime that they acquire a validated Common Veterinary Entry Document (CVED) meaning they are fit to be released for free circulation as a product for human consumption.

Beware that not all suppliers of edible insects follow this due process. If you are hosting a publicly attended Bush Tucker challenge or similar fund raising event, your local Environmental Health Officer may request documentary evidence pertaining to the legality of products being used i.e. a copy of the relevant CVED. In the interest of health and safety we advise that, whenever purchasing edible insects, you ensure the relevant CVED is in place.
