Harvest fruits when they are 4-8" long and 2-3" in diameter, while they are still green.
Fruits are excellent in broths, soups, or stir-fries, and almost everything about the plant is edible including the leaves and shoots. Fruit is high in quinine given its distinctive, mildly bitter taste. Prepare fruits by removing the inner pith and seeds. Try stuffed them with pork, seafood or cooked with fermented black beans. Recommended as healthy food by the American Diabetic Association.
