2. How to install these SSDs?

3. How to pair the new SSDs with the T2 security chip?

Your Mac will be completely unresponsive after the SSD upgrade because the new SSDs are not recognized by the original T2 chip firmware. Please refer to this guide on how to restore the T2 chip firmware using Apple Configurator 2 (by using 'Action -- Restore').

4. How to install/restore MacOS?

Because secure boot is enforced by the T2 security chip, you can only make a fresh installation of macOS via Internet Recovery. However, prior to the SSD upgrade, you may back up the entire macOS pratition from your old SSDs to an USB or thunderbold external storage using Disk Utility. Afterward, you can restore the original copy of your system to the new SSDs.
