Kale is a nutrient-rich, leafy vegetable that you can grow indoors all year round. Make sure to provide your kale plants with lots of moisture and light to help them thrive. Kale is an excellent addition to salads, smoothies, and other nutritious meals. Not only do they add a nice twist to your salads, Kale sprouts may provide a lot of health benefits. Including reducing your risk of some types of cancer and providing your body with tons of vitamin C. Kale is high in carotenoid phytonutrients and is among the highest sources of lutein, an important carotenoid for eye health, which has been found to reduce the risk for glaucoma. Other phytonutrients in kale include chlorophyll, myrosinase, glucosinolates, beta-carotene, flavonols, and lignans.

How to Plant:

Prepare your soil or a hydroponic growth mat, by getting it sufficiently moist. Spread seeds evenly across the surface. Be wary of over-seeding, which can lead the seeds to be overcrowded, leading to crop failure.

After seeds are sown, cover for one to two days to allow seeds to germinate, and then uncover seeds and place under a grow light or in a place in your home that gets a lot of sunshine (rotate crop if next to a window to prevent "bending" in the microgreens). Continue to water when needed for up to a week and a half. By then, you should have a bounty of little greens to incorporate into your meals.
