The color of the tea will be determined by the amount of time during which the fermentation of raw material juice took place. Frying prevents the further oxidation process:

• Weakly fermented tea (green) with a low degree of oxidation will be successful if the leaf was oxidized for 3 to 6 hours.
• Semi-fermented tea (red), with an average degree of oxidation - from 10 to 16 hours.
• Fermented tea (black), with a high degree of oxidation - from 20 to 36 hours.
• Unfermented tea is withered and dried tea.

 

How to brew fermented Ivan Tea:

It is preferable to brew tea in a teapot, pour boiling water over the container and then add one teaspoon of tea per cup of water. A third of the container is filled with water. Boiling water is added after 5 minutes. It is not necessary to wrap the container. After 10 minutes, the contents of the teapot should be slightly shaken - this activates the effect of essential oils. Now you can pour tea into a cup and enjoy its taste. You can also use a French press for brewing. Depending on your taste preferences, you can add more or less brews.

You can also brew tea cold. To do this, a tablespoon of brew is poured with a liter of cold water. It is necessary to withstand the drink for 12 hours. In such conditions, even more useful properties of Ivan tea are preserved.
