The crusher Agrifood Cerda Srl has always been a point of reference for the charming hilly area of Cerda(PA), on the slopes of Madonie. Here nature, thanks to the mild climatic conditions, allows the cultivation of a wide variety of excellent agricultural products, including the olive tree, present for more than 2000 years in our territory, thanks to the Greeks.
Our mill is a continuous cycle plant Amenduni, capable of giving the oil anfruity aroma and to keep them intact organoleptic properties.
Our oil is the final result of acareful selection, dictated by experience and tradition, of various cultivars which are found in our territory, mainly "NOCELLARA ETNEA", "BIANCOLILLA" and "CERASUOLA" .
This mix gives it a unique balance of flavors, and the peculiarity of seasoning without covering the flavor of our dishes.
The olives they come hand picked from our local producers between October and November, when they are still at the beginning of their ripening, with the stripping method (that is, through the use of combs that detach the drupes individually), which avoids the stress of the plants, giving each year a high standard of quality.
At the end of the harvest day the olives come conferred in the mill, where efforts are made to carry out quickly
the milling operations (no later than 24 hours) , thus ensuring that the oil obtained maintains all those naturally present substances such as fatty acids, antioxidants, etc.
The storage is carried out at silos in stainless steel at a temperature of 15-20° where the natural process of decantation takes place which allows the deposit of sludge, giving our oils ahigh shelf life in the long run up to 18 months after milling.
The oil has a green color with golden yellow reflections, delicate fruity with hints of freshly cut grass, balanced taste and a slightly spicy aroma. Ideal for seasoning all types of sauces, sauces, roasts and salads.
