This is because, wine is produced by fermentation of fruits "that are high in sugars" by yeast, however, even when the final taste is achieved, there is still yeast & some sugar left. Without potassium sorbate, the fermentation process may continue thereby changing the taster of wine.

Description:

Potassium sorbate also known as a "wine stabiliser," potassium sorbate produces sorbic acid when added to wine. This serves two purposes. When active fermentation stops and the wine is racked for the final time after decantation, the potassium sorbate prevents any live yeast from multiplying. The yeast living now can continue to ferment any residual sugars into Co2 and alcohol, but when they die there will be no new yeast to produce future fermentations. When the wine is sweetened before bottling, potassium sorbate is used to prevent fermentation when used with potassium metabisulfite.
