The pine cone is an edible tiny seed that comes from the female pine cone of a pine tree. Although most pine trees produce edible seeds, only 18-20 species produce fruits large enough to be worth harvesting. Most of them live in North America, Europe and Asia. The process of production and trade can take from 18 months to 3 years, hence their high price in the market. The pine cone as a fruit is usually in the shape of a drop with a beige color, while its texture is relatively soft and buttery. The seed is removed by breaking the hard shell. Their taste is sweet.

It has been used since ancient times as an edible seed and it is often added to salads and recipes of Mediterranean cuisine. Typical is the use of pine nuts as a key ingredient in Italian pesto sauce. It is often roasted before being added to the recipe, for example when used as a nut in semolina halva.
