Cubeba pepper, also known as Java pepper or tail pepper, is the fruit of a vine called Piper cubeba. This tropical vine has been cultivated in Java, Sumatra and other Indonesian islands for its fruit. The vine is of the Piper genus, just like black pepper which comes from the Piper nigrum plant.

Kumbeba fruits are harvested from the vines when they are still green and unripe. They are then allowed to dry until they shrivel and have a wrinkled, dark brown surface. The Cubeb pepper is similar to the black pepper, but is slightly larger and has a small tail protruding from each fruit.

It has a strong, aromatic, peppery scent with notes of eucalyptus and pine. Its taste is bitter and spicy, but when overheated, it releases spices-like flavors.

In which recipes is Kubeba pepper used?
Kubeba pepper is used in all cooking recipes, when we want to give them a peppery and lemony taste of mild intensity, such as fish, soups, dressings, dips, marinades, poultry and meat.
Kubeba pepper combines well with turmeric, allspice, bay leaves, thyme and oregano.
