DANDELION Always thought about growing that medicinal herbal garden you've always dreamed about, then Dandelion is a unique vegetable, medicinal/herb will be a great step in the right direction. Dandelion can be eaten as a vegetable and used to make honey and coffee! A truly wonderful plant. Evolving millions of years ago, the plant has been used by Romans, Egyptians, Chinese and Greeks for thousands of years. FOOD Leaves may be eaten fresh, sauteed, steamed or boiled and contain vitamins A, C and K as well as iron, calcium, potassium and manganese. In fact, the entire plant is edible! Leaves, flowers and roots. Leaves are used as a vegetable, the roots may be dried and roasted to make an excellent coffee substitute. The nectar filled flowers may either be dried and used in teas or freshly picked and used to make honey by infusing with sugar and water to make a great tasting thick honey. (See the honey, tea and coffee recipes below). HOW TO MAKE HONEY Pick a bunch of fresh flowers (around 200 - 250 flowerheads). Place them into a saucepan with 1 litre of water, bring to a boil for just 20 minutes. Let the mixture cool down and let it stand overnight. The next day, strain the liquid, discard the flowers and add 1kg of sugar to the liquid. Now bring the liquid to a boil, mix well until it thickens. Add the liquid into your favourite jars for later use! Some recipes add lemon or orange to the flower mixture, while you may experiment by adding calendula, vanilla bean, mint or other unique herbs and spices. HOW TO MAKE TEA Here are the basic steps for making any herbal tea: Bring water to a boil. Add about two teaspoons of dried ingredients to a tea infuser or teapot. Pour hot water over it and allow to steep for 10 minutes Strain and add any type of flavouring you'd like such as cinnamon, vanilla, honey, etc. HOW TO MAKE COFFEE Once the plant has been dug from the ground, clean the roots. Cut the root up into thin slices and place in a bowl of water to soak overnight. Change the water a couple times during this period. The next day, strain the water and let the slices dry out. You can then dry roast the slices of dandelion root carefully in a frying pan or in the oven until brown. Let them cool first and they can then be placed into a coffee grinder and there you have it!
