MACHA tea or the magic of Japan is the most popular green tea in the world.

It is the finest tea in the world. It is essentially a finely ground powder of green tea leaves. The word comes from matsu 'rub' + cha 'tea', from the Chinese (dialect) chá meaning tea.
What are its differences from the rest?
Despite the fact that both regular green teas and Matcha come from the same plant, there are differences between them. These differences start from the process of growing the plant and specifically the period before harvest. Matcha green tea bushes should be covered from direct sunlight for about 20-30 days before harvesting.

In the case of Matcha, the powder of the whole leaves is absorbed and therefore has higher levels of caffeine, but also antioxidants. Indicatively, a cup of Matcha tea contains three times more caffeine than a cup of regular tea!
Organic Matcha is expensive because growing, harvesting, and grinding the tea leaves into a powder is a labor-intensive process.

Where else can you use it?
Because Matcha is a type of tea that is traditionally ground into a fine powder, it can be used in many ways. Recently, it is one of the hottest trends in gastronomy, with cooks and chefs preferring it for their sweets, but also for some savory dishes, sauces, etc.
On the menus you can find it from iced or hot tea, lattes and smoothies, to pancakes, ice cream, muffins, brownies, creams, soups and much more, all with the characteristic green color.

It is ideal in juices, in vegetable salads, fruit salads or in yogurt together with other fruits.

WHAT TO REMEMBER!
Don't add too much water before whipping. Adding too much water will prevent foaming. You can add after the foam layer is created.
When making Matcha, boiling water should be avoided to preserve its smooth, mild taste. Using boiling water will release its tannins causing an intense bitterness.

How to use: Make the matcha tea using hot water, just before the boiling point. It is best to consume it at least 6 hours before bedtime.
