Recipe book featuring items from Pierre Wolfe and his famed Quorum Restaurant in Denver. Wolfe’s Capitol Hill restaurant hosted politicians, Hollywood stars and locals from 1960 to 1990. From 1960 to 1990, Wolfe ran the Quorum from a street-level space in the Argonaut Hotel, serving an estimated 25,000 Steak Diane a la Pierres, the flambe specialty, cooked table side with cognac fueled flames shooting into the air. Wolfe himself prepared a great number of the signature New York Strip steaks in the burgundy-carpeted room with red drapes and purple chairs. Over the years, Wolfe served numerous showbiz stars including Marlon Brando, Anita Ekberg, Clint Eastwood and Paul McCartney. Prominent Colorado politicians frequented the Quorum. President Dwight D. Eisenhower was a repeat customer at Wolfe’s first restaurant, The Patio, in Littleton.
