Spill The Beans On Coffee Know How-

 In general coffee is grown around the world, any where between the Tropic of Cancer and the Tropic of Capricorn. Each area of the coffee world has it's own growing cycle determined by the climate of the region. When a coffee tree reaches maturity,(which can take 4-7 years), it begins to bear fruit clusters along its branches. Referred to as cherries, the fruit is initially green and turns red when it is ready for harvesting. Beneath the cherries' red skin is pulp, an outer layer and a parchment like cover covering the bean. Inside the layers are usually two oval shaped beans, with their flat side facing each other. Harvesting time for coffee cherries will very by region and altitude. Typically there is only one harvest per year, which will last for 2 to 3 months as cherries ripen.

 Once harvested, the coffee cherries must be processed within 12 hours to prevent damage and spoilage of the beans. During the coffee processing the green bean is extracted from the cherry or fruit that surrounds it. Coffee is processed in one or two ways: the Wet or Dry method.
