Ingredients and how to make Dok Jok (Lotus Flowers) Thai Cookies

Ingredients

-1 cup rice flour

-1/2 cup all-purpose flour

-1 cup tapioca flour

-3/4 cup clear limestone water (see below)

-1/2 cup water

-1 egg yolk

-1 tablespoon vegetable oil

-1 1/2 teaspoons salt

-5 tablespoons sugar

-4 tablespoons black and white sesame seeds

-Vegetable oil for frying

How to make

- Sieve the rice flour, all-purpose flour and tapioca flour together and transfer into a bowl for mixing. Add clear lime stone water and stir. Add egg yolk, vegetable oil, salt, sugar and sesame. Mix thoroughly.

- Put the oil is heated, immerse the mold containing Flower- shaped cookies until the printing is finished in excessively hot oil. Raise it from the pan and place on the paper towel,to get rid of the oil at the bottom of the mold and put the mold in the flour enough to do printing. There after , raise it and immerse it in the pan with oil , ensuring the mold get into the oil by half only when the flour hardens , press the mold down to the bottom of the pan. There after shake the flour slowly out and fry the cookies so it become golden - yellow color. Use a ladle to put the cookies on the paper to get rid of oil. When it cools , put it in a container with a lid.

Important 

Soak your new brass mold in vegetable oil for at least 2 days before using it, this will prevent batter from sticking to it.

Limestone water

Prepare limestone water by mixing one tablespoon red limestone paste with 2.5 cups water. Stir well and leave until the lime crystals sink to the bottom. Then pour 2/3 cups of this clear liquid into another container. Discard the rest.
