Cinnamon Sticks

Cinnamon, also known as the bark of the Ceylon cinnamon tree, originates from tropical areas in India, Sri Lanka, and Burma. It is currently grown in Asia, Africa, and South and Central America. The spice is obtained from the bark, which is harvested 2-3 times a year during the rainy season. The bark is then cut and undergoes a short fermentation process, is cleaned, and then dried in the sun. During these processes, it forms into characteristic tubes and takes on a yellow-brown color, and is henceforth known as cinnamon. Cinnamon supports digestion, has warming and anti-inflammatory properties, is antibacterial, and lowers blood sugar levels. Cinnamon is most commonly associated with Christmas because of its unique aroma. In the kitchen, it is used as an addition to cakes and other desserts.
