Nam Prik Nam - Pu is a very popular dipping sauce. It is seasoned with nam - pu a favorite seasoning which is made from small crabs found in rice fields. When it rains, there are a lot of crabs and people collect and preserve them. The crabs are pounded until they turn to a liquid. Then herbs are added and the mixture is simmered until it becomes thicker. This dip is a source of protein and calcium. It can be stored for a year outside a refrigerator.

Nam - pu is high protein, fat and calcium. It is a seasoning for many kinds of dishes such as dipping sauces, curries and salads. Due to its high fat content, eating a lot of it may lead to yawning and drowsiness.

Ingredient
20 each bird eye chilies
10 each garlic cloves
5 each red shallots
1 tablespoon thinly sliced lemongrass, lower tender portion
1 tablespoon nam – pu ( crab paste )
½ tablespoon  salt

How-to
1. Pound the lemongrass, shallot, garlic and salt, until well blended. Add the chilies and pound.
2. Season with num - pu. Stir until mixed. Serve with fresh vegetables.
