De Cecco take great care, attention, experience, quality at every stage: from the mill to your table.

Selecting excellent wheat is the first step, and the most important one, in creating unique pasta.

Since 1831, Don Nicola De Cecco was already producing “the best flour in the county” in his mill. To this day, De Cecco grind all the wheat in thier own mill next to the pasta factory, floating with intense and delicious aromas.

Using cold water and dough at a temperature below than 15 degrees: it creates a pasta that fully respects the wheat.

While it is the drawing process that gives the pasta its shape, it is the bronze plates that makes De Cecco pasta uniquely porous, so it captures all the sauce. Hence, this is one of the special procedures we have chosen to preserve and protect. 

They then slow dry the pasta at low temperatures to keep the sensory properties of the wheat intact.
