Scorzonera Duplex is a very valuable and healthy two-year crop, besides good taste it is distinguished by great nutritional value and dietary qualities. It contains vitamins B1, B2 and C, it contains a lot of carbohydrates, protein and mineral salts. But its main advantage is the high content of inulin in root crops, about 10%, as well as asparagine, levulin, which improve carbohydrate metabolism. In addition, scorzonera root crops contain up to 2% pectin substances. It is very useful for obesity, vitamin deficiency, anemia, atherosclerosis, inhibits the development of gout, rheumatism, polyarthritis. In the first year, long, black unbranched root crops up to 30 cm, with black peel and white pulp, and a powerful rosette of large lanceolate leaves are obtained. In the second year, the plant reaches 1.5 m in height, branches strongly and blooms. Scorzonera is sown in April or before winter in open ground. The distance between the rows is 20-25 cm. The seeds are not planted deeply, by 2-3 cm. For 10 square meters. m will require about 20 g of seeds, they germinate for a long time. After the scorzonera forms 3-4 leaves, the plants are thinned out, leaving a distance of 5-8 cm between them. Then they are fed with ammonium nitrate and the feeding is repeated two more times during the growing season. Scorzonera flowers are large, yellow. For direct consumption, the roots can be harvested from the beginning of October, and for winter storage - only before frost. Root crops are dug out by prying them with a pitchfork. If you damage long and fragile roots, milky juice flows out of them and they become fibrous, poorly stored, and lose their taste. The roots are kept in the cellar, sprinkled with sand. To remove the peel from root crops, the roots are poured over with boiling water, they are kept in water for about 2 hours, so that the milky juice ceases to stand out. The pulp is sweetish. Scorzonera can be cooked in the same way as asparagus, or baked in a dough. The delicate leaves and fleshy flowers of scorzonera contain milky juice and have a taste reminiscent of young walnuts - they are used in salads.
