A rare and historic luxury tea

The rainfall, soil, and elevation of the Uji area of Kyoto provide ideal conditions for tea cultivation. Throughout its eight hundred years of history, Uji tea has been renowned as some of the finest in all of Japan. Tencha is the name for the unground tea leaves intended for use as matcha. Because most tencha leaves are ground up into matcha powder, tencha is not generally available on the market and is instead consumed primarily by tea farmers in their own homes. Perhaps they are trying to keep the secret of Uji tencha to themselves? The leaves used to make tencha are shaded for at least twenty days before being picked by hand, steamed, and finally dried in a furnace.
